Cod ceviche
(South American
salad of fish cooked in lime)
| Ingredients 2 cod filets 1 red onion 2 red peppers 2 tomatoes chives 6 limes 1 spoons of olive oil 1 spoon of sugar seasalt and pepper 4 avocado's |
Preparation Chop the onion, slice the peppers very thin, skin the tomatoes, take the seeds out and cut into small cubes. Cut the chives. Cut the peel of 2 limes. Mix the juice of all 6 limes with the olive oil, vegetables and herbs. Cut the fish into cubes and mix with the marinade. Leave for at least 30 minutes or even better for 3 hours in the fridge. Decorate the ceviche with course ground pepper. Mix with avocado or serve in avocado halves. Serve with toast and some green salad. |
